Soup for the Soul | How to make Homemade Creamy Tomato Soup


Ever since I deactivated my personal facebook this week, it's made me realize the frivolous time I spend on so many things (not only 45 minutes of wasted time reading status updates!)
It's made me reevaluate the things I don't really need or are not a positive influence on my life.

That, in turn, has helped me to establish what I do love and I do crave: 
spending more creative time in the kitchen. I think Johnny has appreciated this more too!

Here is a simple recipe for homemade tomato soup. It's TOO easy.
Once you make this, you'll find yourself keeping the basics stocked in your pantry
because it's almost as easy as throwing milk into the concentrate and there's a heck of a lot 
less sodium in this variety!

Creamy vegetarian tomato soup for 2


Bring to a simmer:
1 can of small diced tomatoes (I love the Italian variety, or garlic and onion variety!)
**sometimes i'll just add in a few other fresh tomatoes, too!
dash of Italian seasoning
1 Tbsp butter
1 tsp salt
1 dash of garlic powder
1 TBSP of ketchup or 2 tsp of white sugar
4 fresh basil leaves diced up

Let it simmer for 5-10 minutes. 
There's no secret here. I just let the ingredients and flavors combine!

Dump it all (very carefully!) in a blender (or use an immersion blender!) and add the following:
1/2 cup of milk (or half/half)
Blend until smooth and creamy and a bit bubbly on the sides!

Put it back on the stove to warm it up a bit and Voila! I like to top it with fresh basil leaves!





Do yourself and the one you love a favor. Make a crispy grilled cheese and serve this soup! You'll never go back to Campbells!
